Camp Recipe: EMP’s

Let your kids cook you dinner! 

Confidence in the kitchen is a great skill for kids to work on! It will lead to a strengthened sense of independence and self-esteem. This easy camp recipe will have them feeling like total chefs. They might need a little bit of help with some of the steps, but overall this is a very simple yet delicious meal for the whole family to enjoy. 

English Muffin Pizzas (E-M-P’s) 

Makes 2 E-M-Ps

Note: 1 person might eat 2-4 EMPs. 

Ingredients

  • 1 English muffin, separated into 2 halves 
  • 2 tablespoons of tomato sauce/ pizza sauce 
  • 2 tablespoons of shredded mozzarella or cheddar cheese
  • Toppings such as: 
    • Pepperoni 
    • Diced bell peppers 
    • Mushrooms 
    • Olives
    • Pineapple 
    • Whatever you like on your pizza!

Instructions:

Preheat oven to 375 F. 

  • Place the English muffin halves on a baking tray with the inside part facing up. 
  • Spoon 1 tablespoon of tomato sauce onto each English muffin half and spread so that the sauce covers right up to the edge. 
  • Sprinkle 1 Tablespoon of cheese onto each half. 
  • Add any toppings you choose! 
  • Bake in the oven for 10 minutes, or until the cheese has melted. 
  • Enjoy! 

*For bigger personalized mini pizzas, you can try making these on Naan bread instead of English Muffins!

Chocolate Chip Cookies

Maggie and Chad’s Perfect Chocolate Chip Cookies

In the Spring of 2017, Maggie and Chad were determined to invent the most delicious chocolate chip cookies. They spent 2 months swapping out ingredients and experimenting with different ingredient quantities. They made chocolate chip cookies almost every night to come up with what they deemed the most perfect recipe. This is the recipe that our campers use if they do a baking activity while at camp- and it hasn’t disappointed yet!

Makes 24 cookies

Ingredients 

  • 3/4 cup sugar
  • 3/4 cup brown sugar
  • 1 cup margarine
  • 1 teaspoon vanilla
  • 1 egg
  • 2 1/4 cup flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 2 cups chocolate chips

Preheat oven to 375 F. 

Cream together sugars and margarine. Whisk in vanilla and egg. Set aside.

In a separate bowl, mix together flour, baking soda and salt. Add to wet ingredients.

Add chocolate chips and stir until combined.

Form into balls (approx. 2 tablespoons of dough each).

Place on a baking tray lined with parchment paper, leaving room between each cookie because they will spread.

Bake for 8-10 minutes. Cookies should start to brown around the edges but will look slightly undercooked (which is what you want for ultimate chewy gooey-ness). Allow to cool slightly before removing from tray.
